Asian Pickling: Fresh Red Onion & Cucumber Salad by J. Baldwin's Restaurant

Serves: 4
- 1 Cucumber
- 1 Red Onion, small, thinly sliced
- 2 tsp Salt
- 3 tsp Sugar
- 1 ½ Tsp Red Pepper Flake
- 1 Tbs Fresh Ginger, Minced
- 4 Garlic Cloves, minced
- 1 Tbs Fish Sauce
- 3 Scallions, sliced thinly
- 3 Tbs Black and White Sesame Seeds
Directions:
Toss red onion and sliced cucumber in ½ of the sugar as well as ½ of the salt…let sit for about 10 minutes. Mix remaining ingredients except scallions in sauté pan on medium-high heat until married or about 2 minutes, let cool.
Asian Temptation Slider: Soy Marinade
Difficulty Level: Easy
- Serves: 4
- 2 Cloves garlic, minced
- 1/3 c Shallot, quartered
- 1 c Rice Wine Vinegar
- 2 Tbs Sriracha or hot chili paste
- 1/2c Scallions, sliced
- 1 tsp red Pepper Flake
- 1 tsp Korean Five Spice
- 4 c Soy Sauce
- 1 Tbs Fresh Ginger, minced
- ½ Lime, Zested, and juiced
Directions:
Mince Garlic, and ginger, quarter shallot. Combine rice wine vinegar, sriracha, scallions, red pepper flake, and Korean five spice into soy sauce. Zest and Juice lime in there as well, also throwing in the half of lime for extra zestiness. Let meat marinade in fridge for about 4 hours if possible…it can be used as a quick marinade though as well. About an hour should do the trick!
